Bangin' Banana Pancake
Hunger busting breakfast packed with protein and fibre
- 1/4 cup wholemeal rolled oats
- 1 cup spelt flour
- 1 tbsp chopped brown almonds
- 2 eggs
- 1 small banana
- 2 tbsp almond milk
- 1 pinch salt
- 1 tsp baking powder
- 1 handful blackberries, blueberry, raspberries, strawberries
- grape seed oil or coconut oil
- maple syrup optional
Mix all dry ingredients together in a bowl
Whisk the eggs with a fork
Fold the eggs into the dry ingredients
Add remaining ingredients
Whisk together until evenly distributed
Heat the pan with a teaspoon of grape seed oil (medium heat)
Add two tablespoons of the mix to the centre of the pan.
When the cooking pancake has air bubbles on the surface, flip the pancake
Cook the other side until brown.
Repeat with remainder of mix.
Serve with sliced banana, berry mix and maple syrup to taste
